What a visit becomes The package

One agreement, one team, one set of numbers. Menu, technology, marketing, sales and suppliers walk in together, led by Chef Aziz, and answer to a target you agree in writing.

Four moves, in order, every time

The same sequence for an opening and for a turnaround. The order matters: nobody touches your menu before the number is in writing.

    The walk-in

He comes in the way your guests do. He eats, then watches a full service from the floor and from the line. Then he reads the books: sales, food cost, labor, reviews and the supplier invoices.

Then he tells you what he saw, to your face. No deck, no pitch, no consultant who has never worked a Friday.

    The number

The target is the number the whole agreement answers to: covers, average check, food cost, labor, or whatever is actually holding your restaurant back. We set it together, from your own books.

It goes in writing before any fee beyond the visit.

    Full authority

For the term of the agreement Aziz has one hundred percent operational authority. The kitchen, the floor and the marketing run our way, and it is signed up front, so nobody relitigates it at eight on a Saturday night.

Half measures are how restaurants stay stuck.

    Ninety days

Ninety days, measured every week with numbers you can check yourself. Cameras rolling, if you want the series in the room.

When the target is hit, you decide what you keep paying for.

What is included

Nothing sold separately, nothing handed to a subcontractor you have never met. No prices on this page. The target goes in writing before any fee beyond the visit.

Who it is for

Independent restaurants in Indianapolis and around it, and the rest of the Midwest next. Owners who want the room full and are ready to hand over the keys to the kitchen for long enough to fill it.

Who it is not for: anyone who wants a report to put in a drawer, or advice they can ignore. There is no report. There is a target, a team and ninety days.

What you keep control of

Aziz takes full operational authority for the term. Here is everything that stays with you.

How the ninety days are measured

  1. 1

    The baseline

Taken at the walk-in, from your own books and a full service watched from the floor and the line. This is where the ninety days are measured from.

  2. 2

    The target, in writing

One number the agreement answers to, agreed together before any fee beyond the visit. Covers, average check, food cost, labor, whatever is actually holding the room back.

  3. 3

    Every week

The same numbers, every week, shown to you and checkable by you. No new metric invented in week six to make a bad month look good.

  4. 4

    Day ninety

The number against the target. When it is hit, you decide what you keep paying for.

Ask for a visit

Tell us where you are and what is going on. Aziz reads every one of these himself. The first call is a conversation, not an invoice.
